Cottage Cheese Egg Bites

Blending cottage cheese into the eggs gives these egg bites a smooth, custardy texture, and a simple water bath in the oven does the rest. No special equipment needed: a regular muffin tin works.

Cottage Cheese Egg Bites

35 minutes · 3 servings · about 21 g protein per serving*

Ingredients

  • 6 eggs
  • 1/2 cup cottage cheese
  • 2 oz cheddar cheese
  • 1 cup baby spinach
  • 1/2 bell pepper
  • 1 tsp cooking spray

Directions

  1. Heat the oven to 325°F. Spray a 12-cup muffin tin or silicone egg-bite mold well.
  2. Blend the eggs, cottage cheese, shredded cheddar and a pinch of salt and pepper for 30 seconds, until completely smooth.
  3. Divide the chopped spinach and diced pepper among the cups, then pour in the egg mixture until each is about three-quarters full.
  4. Set the tin inside a larger pan and pour about 1 inch of hot water into the larger pan. This water bath keeps the bites soft and custardy.
  5. Bake 25 to 30 minutes, until the centers are set. Cool 5 minutes before removing. Makes 12 bites (4 per serving).

Make it different: Swap the spinach and pepper for diced ham and green onion, or sun-dried tomato and feta.

Storage: Fridge up to 4 days or freeze up to 2 months.

FAQ

Why add cottage cheese to egg bites?

It adds protein and makes the bites creamy and custardy instead of spongy, similar to coffee-shop sous-vide egg bites.

Do I need a sous vide machine?

No. Baking in a water bath at 325°F gives a similar soft texture in a regular oven.

How do you reheat egg bites?

Microwave 30 to 45 seconds from the fridge, or about 1 minute from frozen, until hot.
